Thomas Mandzik is a chef, artist, and creator with more than 30 years of culinary experience. After studying art in college and working as a tattoo artist, he found his true medium in food. Opening Black Lamb Chef Table in Corpus Christi, Texas is the culmination of a lifelong pursuit to create a space where artistry, technique, and hospitality exist without compromise. Today, every dish is approached as a canvas, combining exceptional ingredients, precision, and creativity to create an experience that engages both the eye and the palate. Through Black Lamb Chef Table, Chef Thomas invites guests to experience food as both a craft and an art form.

Chef Table Events
An intimate, reservation-only tasting experience limited to 30 guests per evening — Friday and Saturday only.
The Chef Table is not traditional restaurant service. It is a deliberate progression of courses built around seasonality, precision, and narrative. Each evening unfolds in structured sequence—flavor, texture, temperature, restraint—designed with intention rather than excess.
Guests are seated in close proximity to execution. Sauces are mounted à la minute. Proteins are rested properly. Plating is disciplined, not ornamental. Every component earns its position on the plate.
The format is defined:
Multi-course tasting menu
Optional curated wine experience
Friday and Saturday evenings only
Strictly limited to 30 seats
Menus evolve continuously. No two evenings are identical. Ingredients are selected at peak condition. If a product is not exceptional, it is not served.
The objective is clarity—of flavor, of craft, of identity.
This is not casual dining.

Private Culinary Commissions
Black Lamb offers a limited number of boutique catering engagements by request only.
These are not standardized event packages. Each commission is constructed from the ground up—menu architecture, ingredient sourcing, plating format, pacing, and service style are developed specifically for the host and the occasion.
Everything is made by hand. From breads and pastas to sauces, composed garnishes, and desserts, production is executed in-house with precision and intent. Nothing is built from pre-fabricated systems. Craft defines the experience.
What distinguishes Black Lamb is customization. Every event is one of a kind. No duplicated menus. No recycled banquet templates. Each engagement reflects the client, the setting, and the moment it is designed to honor.
